DESCRIPTION:
Pulsed Electric Field(PEF) processing is an emerging technology for non thermal method of food sterilization. In this method food retains its fresh aroma, taste, nutrients and appearance. In this method we use unipolar and bipolar circuits. Unipolar method has disadvantages like low current and high temperature. Bipolar method results in high current and narrow pulse. This pulse may enter into inner nuclear membrane and may destroy the bacteria. Input is 150v and output we get 2.2kv. So that we can eliminate bacteria completely in food and juices.
